This ham of higher quality is the fruit of careful selection of of pork legs with a starting weight of 12.5 Kg. The salting process, carried out by hand using unsatured salt, guarantees a steady sweetness of the ham, with a careful dressing at the end of this delicate phase. Both the greasing process, which involves a mixture of flare fat and rice flour and is also carried out manually, and the final ripening stage, which occurs in daily naturally air-conditioned rooms, allow our ham to reach the perfect ripening and aroma in the course of a year.
